I’ll admit I was skeptical. I mean seriously, who would have thought you could make a good batch of brownies using black beans and eliminating flour? But, in a desperate search for delicious, gluten free desserts I stumbled across this recipe at Tammy’s Recipes and decided to give it a try. Can I just say…these brownies are to. die. for. Yes, they really are that good.
So for those who are looking for a relatively healthy, gluten free snack, give these a try. You’ll thank me…I promise.
Fudgy Black Bean Brownies
2 cups cooked black beans (or 1 can, rinsed and drained)
3 eggs
1/3 cup melted butter
1/4 cup cocoa powder
2 teaspoons vanilla extract
1 cup sugar (or 1/2 cup honey)
1/2 cup semi-sweet chocolate chips
1/3 cup finely chopped walnuts (optional)
I also added 1 teaspoon cream of tartar, but the original recipe does not call for it.
Okay, so here are the instructions. It’s easy, really easy.
Preheat oven to 350 degrees.
Add black beans, eggs, butter, cocoa powder, vanilla and sugar to a mixer or blender. I used my fabulous blendtec…you know, the blender that claims it can blend cell phones into powder. Blend until smooth.
Grease an 8×8 glass baking dish and pour batter into dish. Sprinkle chocolate chips and nuts on top of batter.
Bake at 350 degrees for 40-50 minutes until inserted tooth pick comes out clean. Let cool, slice into small little squares, sit down and enjoy…then call me and thank me, because you’re gonna love these!
